Applications: OS X installs a number of applications, many of which you probably use every day. These include the Safari web browser, Mail, Calendar You may need to go back into that folder and copy some other files to the new Mac. While I don’t recommend doing a clean installation for each.

the safest form of backup is a bootable clone. you can make one with CCCloner or Superduper or by using the restore tab in disk utility. boot from the bootable clone to make sure it works after you make it. TM backups are ok too but not as reliable as a clone.
either one of those backups will let you restore your stuff after you install Snow leopard. this can be automated. when you first boot up after doing an erase and install you get to setup assistant which lets you migrate your user data and applications from a TM or clone backup. however, this may bring over whatever problems you had so you might want to migrate things by hand. in that case see this link for where important data is stored in your home directory.

one correction to that link. ical data is stored in ~/library/calendars.
and yes, you can reformat the whole drive and get rid of the windows partition. once you boot from the snow leopard DVD start disk utility from Utilities menu and reformat the whole drive using the partition tab. then quit disk utility and proceed with the install.
